It is a thick, paste like plum marmalade boiled in a huge pot. Usually it is used during fasting. Only plum is needed in the process of cooking. The recipe is the simplest one. Plums are being washed, seeds are removed. Then they are placed in the pot and you have to mix it while boiling. It takes about 7 – 9 hours to finish it. To check if it is ready, take a spoonful out of the pot, wait until it cools and then turn the spoon upside down. If it sticks to the spoon it is ready. The patience needed for this job will be rewarded with the gem’s heavenly taste.
